Review on Ormer Mayfair
Shaun Rankin has teamed up with the Flemings Mayfair Hotel to open a sister restaurant to his Michelin starred St Helier venue called Ormer, named after the shellfish found in the waters around the Channel Islands. Ormer Mayfair is part of a £15 million refurbishment of the hotel, a privately owned establishment since 1851 occupying 13 interconnecting Georgian Townhouses.
The luxurious art deco inspired 1920's interiors have been created by Tully Filmer Design, featuring chestnut wood panelling and dark green leather banquette seating, set against dark wood tables laid with small table lights.
Rankin will divide his time between his Jersey restaurant and Ormer Mayfair, having appointed a very skilled team to operate the London based operation. In the kitchen with him is Head Chef Kerth Gumbs, who has climbed the culinary working with celebrated chefs such as Jason Atherton, Joel de Robuchon and Tom Aikens.
Ingredients are carefully sourced and will include some of the signature dishes from the sibling restaurant, such as lobster ravioli in a crab and tomato bisque, and shallot salad. When it comes to main courses there's turbot, pine nut crust, cockles, cauliflower and sea vegetables or for meat fans there's roast duck foie gras, grapefruit, white cabbage, coconut and duck sauce. Artistically displayed desserts close the show in the shape of coconut mousse, white chocolate, pineapple carpaccio and mango or a Victoria plum soufflé with plum jellies and cinnamon ice cream.
Ormer Mayfair has an impressive wine list to accompany the dishes with an excellent selection from British vineyards.
