Review on Fosh Lab
Fosh Lab in the heart of Palma is a fascinating newcomer that has set the hearts of foodies racing, as its the latest invention from acclaimed Michelin-starred chef Marc Fosh. An exciting combination of laboratory and restaurant, where the culinary team research and develop new dishes for the enjoyment of diners in the evening, it will also be used for cooking demonstrations, events and private parties.
Set on a colourful street in the old town area of Palma the interior oozes style, subtly decked out with neutral colours, soft tones and clean-lined furnishings. Chic pendant lighting hangs from the high dark ceiling, while walls are decorated with artistic pictures of food by the award-winning local photographer Nando Esteva. A large TV screen over the open part of the kitchen allows guests to watch all the theatre of the chefs in action.
Head Chef Raúl Garcia Floro and his brigade will pamper your palate with the most exquisite delicacies created from premium ingredients. Expect modern dishes along the line of smoked and marinated llampuga with a hazelnut "ajo blanco", beetroot and pomegranate, as well as ravioli filled with cabbage and foie gras, snail broth "pedrosilla" chickpeas. The kitchen also pleases meat-eaters with Iberian pork, black beer, beetroot and and mandarin or from the sea flamed lobster with "acquerello" herb rice, champagne and plankton. Be prepared to be dazzled when it comes to desserts such as passion fruit, coconut, goat cheese and mint or chocolate with red peppers and raspberries.
Service is notably attentive and knowledgeable whilst retaining a warmth and friendliness to proceedings.
