Adrián Quetglas opened his eponymous restaurant in 2015 on tree-lined Paseo Mallorca, just a stone's throw from the Torrent of Sa Riera canal running through the centre of Palma. A striking picture of a stampeding bull dominates the entrance to the restaurant, which is flooded with natural light from the floor to ceiling windows. Overlooked by the open kitchen the dining room has a modern décor with contemporary chairs set against simply laid wooden tables. In summer months there's a large covered terrace at the front of the restaurant, perfect for al fresco dining and people watching.

Adrián has learnt his craft alongside some big names in the industry such as Marco Pierre White in his restaurant Quo Vardis in Soho, as well as Michelin-starred chef Marc Fosh. When Fosh undertook a consultancy role in Russia, Adrián went with him and subsequently over the next decade directed some of Russia's most acclaimed restaurants, before becoming the co-owner of AQ Kitchen in Moscow.

Showcasing inventive and modern cooking that reflects his travels through Mallorca, London, Paris and Moscow, dishes are produced from carefully sourced seasonal ingredients. Lunchtime the restaurant offers a three course set menu, with a seven course tasting menu with matching wines available in the evening. Proceedings could kick off with Peking duck, followed by green asparagus cream with foie gras and black chanterelles, then Autumn ragout with smoked idiazábal cheese air and wild clover moss. Proceedings continue with corvina with seafood velouté and leavened Japanese radish before veal at low temperature with parmentier of truffles, Jerusalem artichokes mousse and fresh herbs oil. Artfully displayed desserts close the show with cheesecake with calamansi sorbet and there's also chocolate with lavender, lychees and ground cashews.

There's a relaxed ambience and friendly service from the casual attired waiting staff. The restaurant was awarded a prestigious Michelin star in the 2017 edition of the Guide.
