Sam Metcalfe honed his skills in a clutch of big-name London kitchens before setting up his own place in a defunct branch of Lloyds Bank, a few minutes from Brighton seafront. That was in 2001, and Sevendials is now one of the big hitters on the local scene. As Jay Rayner noted in The Observer, 'Sam has raised his game and created a restaurant to be proud of.'
The building still looks rather grand, with its stone fascia, big windows and polished wood floors; there are also lots of personal touches, including family photos, fresh flowers and displays of artwork around the place. Downstairs is a funky room for private bashes, while Sevendials' south-facing, continental terrace gets packed to the gunnels on fine days.
Sam Metcalfe buys locally, gathers herbs from his garden and changes his full menu every six weeks (there's also a brilliant-value set price lunch menu that varies from day to day). Among the dishes on offer might be Dorset crab and baby leek risotto, char-grilled pork loin chop with Cox's apple and date chutney, mustard mash and spring greens or monkfish wrapped in Parma ham with endive tarte Tatin and chive butter sauce. Desserts are unshowy offerings like such as rhubarb and macadamia nut fool or chocolate ice cream profiteroles, and the contemporary wine list opens with a fistful of good-value house recommendations.
