Review on Sabor
Meaning flavour in Spanish, Sabor is an exciting gastronomic addition to the city's dining scene, located on Heddon Street in Mayfair. The driving force behind the restaurant is Nieves Barragán Mohacho, former Executive chef of Barrafina where she earned a prestigious Michelin star and José Etura who was the Group's General Manager. Sabor has also received backing from JKS Restaurants, which are owned by the Sethi siblings of the Michelin-starred Trishna and Gymkhana. Sabor also received their own coveted Michelin star in the 2019 edition of the prestigious restaurant guide.
Spanning two floors, The Counter is located on the ground floor where guests can enjoy regional Spanish tapas style dishes including fresh fish prepared by their in-house fishmonger. There's counter seating at the marble topped bar that overlooks the open kitchen, which displays beautiful wall tiles from Southern Spain. Elsewhere there's exposed brick walls and worn timber flooring.
Take the spiral staircase to the first floor El Asador at Sabor, where you can sit at large communal tables overlooking the open kitchen, to enjoy specialities from from the Galicia and Castile regions of Spain. They are cooked in the 'asador' a traditional wood fired oven sourced from Castille or large copper pots brought in from Galicia. Among the starters look for crispy pig's ears or maybe setas, piquillo and prawns before moving on to Segovian suckling pig or lamb cutlets and arrocina beans. For a refreshing finish there's a citrus sorbet lemon thyme or goat cheese ice cream with liquorice jus.
To complement the menus there's Spanish vermouths, gins, sherries, txakolis, wines and beers, and after enjoying your tapas and drinks, you are invited to throw your paper napkins on the floor to show your appreciation of the food!
