Terry and Louise George have worked wonders since taking over The Starr at Dunmow and have transformed it into one of the most professionally run and reliable restaurants with rooms in the county of Essex.
The big, white, timber-framed building looks just like a traditional market town inn, which is exactly what it used to be. You can still see reminders of its 500-year history - especially in the dining room, where one of the exposed beams even has a hunting scene painted onto it, and this also features in the Fitzwilliam Museum in Cambridge. An elegant conservatory adds a more contemporary note.
Chef Mark Pearson's daily-changing menu makes satisfying reading with its inventive, modern Anglo-French dishes. To open the show there might be seared Highland scallops with cauliflower purée, caramelised cauliflower beignets and aged balsamic or confit of Loch Duart salmon. Main courses usher in some robust meat specialities – perhaps rack of Royal Dornach lamb with hot-pot potatoes, pickled red cabbage and thyme jus or slow-roast Lincolnshire pig's cheeks and foie gras with truffle potato purée and white bean foam. As a finale, you might fancy banana croustillant and praline parfait or one of the Starr's home-churned ice creams.
On Friday evenings, there's also a seven-course tasting menu that provides a cavalcade of exquisite miniatures such as crispy fried foie gras with spiced apple pain perdu and apple purée or an assiette of rabbit. The wine list is a broadly based selection of well-chosen bottles from the Old and New Worlds.
