Founded in 1953 by Juanito and Luisa Salcedo. The cuisine is based on the extra virgen olive oil from its own olive trees and prepared in its olive mill. Extremely elaborate peninsula cuisine, using quality ingredients. The focus of the cuisine centres on the vegetables of the Guadalquivir Valley and the kid and game of the Jaen mountains.
