Michelin-starred chef Martin Wishart has added a second string to his bow by opening a new restaurant in De Vere's flagship Cameron House on the banks of Loch Lomond. Wishart started his stellar career here (he was chef de partie back in 1991) and he is keen to make an impact back on his old stomping ground. As you might expect, the kitchen takes a top-end approach to modern, French-inspired cuisine based on locally sourced ingredients.
The carte might open with smoked organic Shetland salmon, ceviche of razor clams and scallop or a risotto of spelt grain with Strathspey girolles and preserved truffle, ahead of herb-crusted fillet of Buccleuch beef with Szechuan pepper sauce or roast John Dory with choucroute, beets and lentil jus.
An six-course tasting menu is available for the whole table, culminating in desserts such as grapefruit and yoghurt terrine with passion fruit sauce and mint granita. The prestigious wine list shows the same attention to detail, with a stupendous selection from France and great-value drinking possibilities from elsewhere.
