The panoramic expanses of Ballycotton Bay are one of the great assets at this refurbished hotel on a hillside overlooking the village and its working harbour. There are great views of the scene from the original gardens and also from the windows of the dining room.

Local Irish produce – especially seafood – determines much of the menu and the kitchen is keen to list its most trusted suppliers. Seared Castletownbere scallops are served elaborately with watercress pur้e, apricot chutney, candied cabbage and carrot glaze, while roast fillet of cod might come with a warm salad of Ballycotton new potatoes, asparagus, grilled fennel and herb froth.

On the meat front, expect anything from roast saddle of rabbit with Toulouse sausage, saut้ed spinach, girolles and smoky garlic sauce to beef bourguignon with truffle mash, while desserts herald banana cr่me br๛l้e with coconut biscuits and passion fruit sorbet or steamed pistachio sponge pudding. The 100-bin wine list offers a broad multinational choice.
