Review on Fischer's Baslow Hall
Set back from the road at the end of an avenue of chestnut trees, Baslow Hall looks for all the world like a historic manor house with its gabled wings, leaded window panes and tall chimneys. But don't be fooled: it was actually erected in 1907 for an eccentric local vicar.
Max and Susan Fischer are diligent, long-serving hosts, and visitors love the place for its relaxed, charming feel. Baslow Hall’s crowning glory, however, is its exquisite Michelin-starred food. Expect to be surprised by roast sea scallops with pumpkin fondant and ginger foam or caramelised belly pork with peanut brittle and escabèche salad, then soak up the pleasures of turbot braised in red wine with choucroute and roast salsify or a ‘taste’ of Derbyshire lamb with minted pea tortellini. Desserts are equally remarkable creations like rhubarb and Champagne jelly with rhubarb Madeleine and even a textbook version of summer pudding.
