Sleek elegance and five-star English refinement are the prime features of this ultra-luxurious hotel set in a nineteenth-century, neo-classical mansion. The hotel now boasts formal gardens, a spa, imperial suites and two impressive restaurants.
Fine dining takes place under the ornate domed ceiling of the sumptuous Vellore Restaurant, where old-school formality is the order of the day: expect legions of aproned waiters and much lifting of cloches - even the bread is 'carved' from a trolley. The food is refined, elaborate and modern - witness ballotine of foie gras with oyster beignet, carrot and Sauternes foam, fillet of line-caught sea bass with girolles, ventreche bacon, pistachio fricassee and artichoke purée, then bitter chocolate and soft cheese tartlet with wild strawberry and black olive confit.
Sunday lunch is a popular traditional affair, with live jazz added to the package once a month; the hotel is also renowned for its quintessentially English afternoon teas, accompanied by a 'dance quartet'. Alternatively, choose the conservatory-style Alfresco Restaurant, which serves Mediterranean-style food in a setting of exotic palms and murals.
