Review on Ametsa with Arzak Instruction
Ensconced within the auspicious Halkin Hotel in the heart of Belgravia, Ametsa with Arzak Instruction is the new Basque restaurant that has taken over the space formerly occupied by David Thompson's Nahm. This new venture comes from acclaimed chef Juan Mari Arzak and his daughter Elena, owners of Arzak in San Sebastian, holder of three Michelin stars and considered one of the best restaurants in the world.
The restaurant has been giving a stunning makeover from AB Rogers Design with stark white walls, tables dressed with crisp white linen set on modern wood flooring, and the pièce de résistance is the stunning sculptured gold-pronged ceiling, made from 7000 glass receptacles filled with spices.
Juan and daughter Elena, who was voted World's Best Female Chef by Restaurant magazine in 2012, have brought their award winning team with them to recreate their exquisite dishes. The kitchen employs first-class, locally sourced organic produce for its new Basque cuisine, featuring earthy flavours and technical flourishes, together with the beautiful visual presentation of the dishes.
Open the show with a starter of scallops with Vieiras con Beta caroteno, betacarotene or maybe Ostras con Buey, scallops with betacarotene, beef with native oysters. Main courses move into the realms of Lubina con Emulsión de Ajo y Vegetales Fritos, sea bass with garlic emulsion and fried vegetables or for carnivores there's Carrilleras a La Vainilla, ox cheek with vanilla. After that, the kitchen sets out to impress with the likes of chocolate fondant with Piquillo ice cream or clove custard, toasted milk and pineapple ice cream.
