Review on Arbor at The Greenhouse

The Arbor Restaurant is set in the eco friendly boutique Greenhouse Hotel in the large coastal town of Bournemouth in Dorset, just a short walk from the Pavillion Theatre.

The large restaurant at this four star luxury retreat serves modern menus offering a range of culinary delights, showing invention and considerable attention to detail. The menu follows the seasons, products are sourced within a 50 miles radius and the kitchen under the leadership of Andy Hilton is committed to promoting sustainability, ensuring that all ingredients used are of the finest quality and organic when available. As a curtain raiser, try the smoked pork belly, spiced baked beans, Stornaway black pudding fritter before a main course of roast line caught turbot, braised white cabbage, dill potato and dumplings. To close the show there are desserts such as chocolate rice crispy cake, cereal milk ice cream and caramelised banana puree or maybe the rustic apple pie, green apple sorbet with apple jelly will tempt you. Andy also offers a critically acclaimed tasting menu of six courses, including champagne cured mackerel with beetroot hummus, or marmalade brioche with bitter chocolate.

To complement the food there is an innovative wine list compiled exclusively of organic and biodynamic wines, which takes into account the carbon footprint of every bottle. There is an extensive range of local beers, organic spirits and a fresh colourful selection of cocktails.

The hotel has 32 chic guest rooms featuring hand crafted furniture that has been made in the UK using natural and sustainable materials.

Summer's most intensely flavoured soup, contrasting the sweetness of English peas with the subtle hint of white truffle. Crispy shallots add texture.

Mrs. Tee's Mushrooms on Toast with Fried Duck Egg £5.95 / £8.95
If Brigitte Tee's mushrooms are good enough for Le Gavroche, they're good enough for Arbor! Local woodland varieties are topped with a big, runny egg and served on today's artisan bread.

Honey Glazed Chicken Wings with English Asparagus £6.95
Seasonal New Forest asparagus sits perfectly with chicken wings glazed in honey from our own rooftop bees. All offset by shavings of salty Old Winchester cheese.

Squid Ink Linguini in Mussel Broth with Mussel Fritter £4.95 / £8.95
The broth is made from semi-sweet white wine and aromatics including garlic, ginger and saffron, blended with steamed local mussels. Light, fresh linguine soaks up the broth, with a hint of welcome acidity provided by the heritage tomatoes.

Rosary Goats Cheese & Beetroot Tart £4.50 / £7.95
Our favourite earthy beets – candy, golden and purple – brought together with a citrusy, creamy Rosary goats cheese from Salisbury (full flavoured, but not 'goaty') in a puff pastry tartlet. Served with a layer of wild garlic pesto.

A powerful combination of fresh, local flavours: sweet, seared hand-dived scallops from neighbouring Lyme Bay, smoky, creamy peas and salty bacon dressed with zesty lettuce.

Stokes Marsh Farm Beef Chop £45.00 (serves two)
Our showpiece, an incredible piece of meat we don't need to complicate. Simply pan-roasted to caramelise, colour and flavour, and served with a garlic pearled spelt – old-fashioned and rustic, but delightfully creamy. Topped off with roasted onions and wilted greens.

Mendip Hills Lamb Shoulder with Shepherds Pie £15.50
We braise the shoulder for four hours to serve you this super soft melt-in-the-mouth, flaky lamb, run through with mint and capers to add acidity. Accompanied by its own shepherd's pie, flavoured with fennel seed and tarragon and a reduction sauce.

Roast Courgette & Rocket Tagliatelle with Toasted Walnuts & Lemon Oil £11.50
Very spring and summer with vibrant green colours. Fresh pasta, flavoured with wild garlic then tossed in lemon oil and rocket pesto. The salad of grapes, radishes, confit tomatoes and cucumber ribbons is dressed with dill.

Home Cured Pork & Stornaway Black Pudding with Granny Smith Fondant £13.95
Ok, here's the science bit: we hand cure the pork for a whole day in our special brine (brown sugar, star anise, thyme and garlic), slow cook at 85 degrees for five hours and press, finishing in a hot oven to crisp up the crackling, producing stunning depths of flavour. Award winning black pudding and a tarragon-apple fondant balance the rich flavours.

Chicken Stuffed with Chorizo with Red Onion Tart Tatin & Buttered Cabbage £13.50
Fantastic British chorizo – from The Bath Pig Company – transforms this wonderful chicken dish, a breast stuffed with a tarragon chicken mousse. A slightly soured red onion tart tatin works perfectly against these flavours, and the buttered cabbage and mash add texture.

A simple plate of 10oz of aged Stokes Marsh rump, sauté mushrooms and our highly addictive twice-cooked chips.

Sea Bream, Lemongrass Emulsion & Saffron Potatoes £14.50
If you like your sea bass, you'll love this, and it's a more sustainable fish. Simple fresh fish, trademark crispy skin, combined with a standout sauce: a fish-stock reduction packed with lemongrass, ginger and fresh chilli, finished with saffron and coconut milk. Comes with fragrant potatoes.

Poached Lemon Sole & Warm Salad of Potatoes, Cucumber Ribbons & Confit Tomatoes £12.50
Our signature salad, and very pretty. Warm, lightly poached lemon sole sits on a frisée salad base, adding a bittersweet element. The salad of grapes, radishes, confit tomatoes and cucumber ribbons is dressed with dill.
