Review on Malmaison Brighton
Formerly the Alias Hotel Seattle on Brighton marina waterfront, it has now been taken over by the Malmaison boutique collection of hotels, first established in Edinburgh in 1994. The brasserie occupies a light, contemporary space with stunning views from its floor-to-ceiling glass frontage, or guests can choose to dine al fresco when the weather is warm on their ship-shaped terrace overlooking the sea.
The kitchen serve classic Mal dishes combining French style with generous British portions, showcasing modern American and Asian influences. As a curtain raiser order chicken liver parfait served with grilled Altamura bread and fig chutney or fritto misto, tiger prawns, calamari and courgette in a tempura batter with sweet chilli and aioli. Main courses embrace Black Angus ribeye steak and steak frites from the grille or Severn and Wye smoked haddock fish cake, spinach, poached egg and grain mustard sauce. To finish enjoy favourites like sticky toffee pudding, vanilla ice cream and pecan caramel sauce or a classic crème brûlée.
