In the hills above Lough Arrow, with prehistoric Carrowkeel Cairns and the Bricklieve Mountains in the background, Christy and Moira Tighe's striking hideaway looks decidedly modern in tone. It's a sophisticated place, greatly valued for its personal hospitality and Moira's skilful modern cooking.
Fine china, fresh flowers and gleaming silver define the mood in the immaculate dining room, where visitors are treated to a succession of finely tuned dishes. The eight-course 'tasting menu' provides a sample of Moira's talents; otherwise explore the nightly fixed-priced dinner.
To open proceedings, you might opt for sautéed scallops with cauliflower cream and shrimp dressing or confit duck and foie gras terrine with apple salsa and cider jelly. Follow on with – perhaps – monkfish on creamed fennel with poached mussels and clams or loin of venison with turnip and truffle cream, and finish with hot chocolate fondant, tobacco ice cream and Earl Grey crème anglaise. Also look for the unusual 'composed' cheese courses (mature Stilton with red onion marmalade and pistachio oil, for example).
