Review on Roundstone House Hotel, Vaughan's Restaurant
The delightful fishing village of Roundstone is clustered around an old harbour and it makes the most of a stunning location: all around there are breathtaking views of Bertraghboy Bay and the dramatically rugged Connemara landscape. At the centre of things is the Vaughan family's personally run hotel, which is also one of the most historic buildings in the locality. It makes a handy basecamp for fishing trips as well as artistic pursuits.
Given the setting, it's no surprise that locally landed seafood figures strongly on Maureen Vaughan's dinner menus. Native produce is used to good effect for a range of dishes including seared scallops with smoked bacon and mushrooms or rack of lamb with potato and parsnip mash. Otherwise, follow the local trend and call in for a bowl of Roundstone mussels washed down with a pint of Guinness.
