Review on The Tilbury
Billed as a 'village pub and dining room', the Tilbury is a popular Hertfordshire restaurant that puts its faith in local and regional produce. Suppliers in Hertfordshire, Essex and Cambridgeshire all do their bit, although fish obviously needs to travel further. Cured duck pastrami comes with orange and peppery greens, Corneybury Farm ribeye steaks are served with chips, smoked garlic and herb butter and it's worth looking out for the dishes involving Great Dunmow free-range pork.
The menu also takes in some ingredients from further afield – Shetland salmon appears as escabèche with potato salad, Suffolk chicken is pot roast and served with sautéed roots, tagliatelle and morels. To conclude, keep an eye out for white chocolate crème brûlée, raspberry and vanilla pannacotta or even party-time jelly and ice cream. Some lighter dishes are also available at lunchtime (local mushrooms on toast with poached egg and tarragon, for example). Beers from home and abroad are on tap, and there are some decent wines for those who prefer the juice of the grape.
