The kitchen garden is up-and-running, producing a fine range of greenstuff for the kitchen. Organic and locally sourced ingredients are one of the owners' passions and you can taste the results in the Shelley Restaurant – a grand room made more luxurious with stained glass, antiques and rich textiles.
Dinner might begin with a trio of pâtés on a balsamic glaze or air-dried Carmarthen ham with melon, before calf's liver with pancetta and Marsala sauce or salmon fillet on Puy lentils with watercress sauce. Also look for game in season and expect an array of traditional puddings, soufflés and roulades to finish. Established names rub shoulders with obscure ones on the enthusiastically assembled global wine list.
