Chef Andrew Burton's daily changing menus reflect what the markets have to offer. You might begin with avocado and crab charlotte with herb dressing, move on to sauté suprême of duckling with Cumberland sauce or pan-fried trio of tuna, plaice and grey mullet with oyster sauce and Mediterranean vegetables, then finish with vanilla pannacotta with mango and pineapple ice cream.
There's also a more extensive seasonal menu featuring dishes like pheasant and shallot terrine or roast loin and sauté rump of Lakeland lamb with rosemary jus, root vegetable champ and fondant potatoes, plus a full menu for vegetarians.
