Review on The Atlantic Hotel, Ocean Restaurant
This impressively refurbished, privately owned hotel boasts one of the finest settings on the island of Jersey, and things are going well in the cool, sophisticated Ocean Restaurant.
Will Holland is the executive chef who leads the kitchen following the departure of Mark Jordan, and he joins the restaurant from Coast in Saundersfoot. Jersey's fruitful bounty and the catch from the local boats are used to telling effect in the kitchen, where the brigade puts together a succession of innovative and classy contemporary dishes with kaleidoscopic flavours and contrasts.
Confit of pork belly might be partnered by a brandade of salt cod, candied shallots and shellfish foam, while thyme-roasted sea bass could be paired with chorizo casserole, seared scallops and 'fish bubbles'. Elsewhere, poached and seared guinea fowl comes with sautéed wild mushrooms, honey-roast, five-spice duck is accompanied by a Griottine cherry jus, and desserts often include a dazzling hot passion fruit soufflé.
