Review on Carrig Country House, Lakeside Restaurant
Four acres of fabulous, luxuriant gardens complete with cascading waterfalls are a feast for the senses at this meticulously restored Victorian residence on the shores of Caragh Lake. Some 950 different species of mature trees and plants are on display in the grounds, which sweep down to a private jetty by the lake. Beyond is the awesome backdrop of the Kerry Mountains.
The aptly named Lakeside restaurant is an elegant room overlooking the water and it makes a fine setting for serious, well-balanced modern cuisine. Irish ingredients loom large, whether it's tian of Dingle crab with cucumber, crème fraîche and lime oil or baked Inveragh salmon with saffron-roasted courgettes, pimento and chive cream.
Local meat and game also figure strongly in dishes such as carpaccio of beef with valerian leaves or Kerry spring lamb loin with rosemary and chestnut stuffing, braised red cabbage and caperberries. Desserts are more straightforward offerings like Dutch apple crumble or peach mousse with strawberry coulis.
