Review on Texture
Texture is a sleek, high-end restaurant housed in a beautifully restored Georgian building on Portman Square. Chef/patron Agnar Sverrisson from Le Manoir aux Quat' Saisons is the driving force behind this striking venue, creating a menu driven by a white-hot culinary imagination that has been recognised by the Michelin Restaurant Guide with a prestigious Michelin star.
The white dining room is impressively embellished with ornate plasterwork and enlivened with glass displays, contemporary canvases and cool modern lighting. Sverrisson hails from Iceland and his cooking blends high French fashion with Asian flourishes and a few nods to his Scandinavian homeland.
Iceland cod might appear with a brandade, avocado, chorizo and sauce vierge, while lamb from Skagafjordur is char-grilled and paired with goats' milk and summer vegetables. The kitchen's experimental streak shows in an extraordinary starter involving tomato 'textures' (confit, roasted, dried, raw and 'water') with artichokes and olives as well as a dish of 12-hour Lancashire suckling pig with squid and bonito sauce. Desserts might include 'textures' of coconut or lemongrass and ginger soup with mango and passion fruit sorbet. As you might expect, Xavier Rousset has put together an auspicious wine list with France as the main contender.
