Review on Restaurant Sat Bains with Rooms
'Sat Bains rewrites the definition of good food for those of us who enjoy eating and cooking. Eating there for the first time was an experience that changed what we thought was possible in the world of gastronomy and nothing has ever matched up to it since.'
That's the view of one enthusiastic Mobile Food Guide user about this uniquely idiosyncratic set up, which is also Nottinghamshire's only Michelin-starred establishment and 'AA Restaurant of the Year for England, 2007'. The premises - a cluster of brick buildings by the River Trent - once traded as Hotel des Clos, with chef Sat Bains running the kitchen; now he owns the whole place and has re-shaped it as a highly distinctive restaurant-with-rooms.
Bains' standard menu is a cross between a carte and a 'dégustation', giving the diners the opportunity to choose and navigate through different courses as they please. Veal sweetbread might be served with langoustine, lemon, mint broccoli purée and jus noisette, while Goosnargh duck appears 'pochi-roti' with melon 'sous-vide', Feta, carrot, foie gras and chocolate.
The separate 'tasting menu' for a whole table catapults diners into the high-end world of experimental twenty-first century gastronomy: here you will find duck egg '62oC' with 'textures' of peas and Jabugo ham or 'emulsified' foie gras with raisin and maple purée, Macadamia nuts, olive and gingerbread, for example. The wine list exudes class, deep knowledge and lively enthusiasm.
