Review on Pur'
Pur' is Park Hyatt Paris-Vendôme's Michelin starred restaurant located in the heart of Paris, on the prestigious Rue de la Paix, and within walking distance of the Place Vendôme and the Place de la Concorde. The contemporary restaurant opens out into a vast rotunda with an open kitchen displaying an authentic grill where they cook over vine shoots and is overlooked by the chef's table that can cater for up to eight diners. Decked out in soft tones of beige and brown it is an elegant setting with original abstract Viswanadhan's China ink sketches on parchment adorning the mahogany walls. When entering the restaurant, diners walk down a small gallery path lined with a six meter wine wall, that not only serves as the hotel's cellar, but is also a cigar and cheese cabinet.
Jean François Rouquette is the talented chef who earned his culinary stripes at such great establishments as Taillevent, Le Crillon, La Cantine des Gourmets and most recently Les Muses. The innovate menu in which simplicity becomes synonymous with purity and refinement opens with flash-grilled mackerel, camus artichokes, garlic nougatine with orange zest or chanterelle mushroom 'bouton de culotte', celery vinaigrette, stuffed romana salad with Cévennes sweet onions. Carefully crafted dishes continue with mains of Brittany lobster grilled on vine wood cuttings sprinkled with cochin spices, curd cheese with sumac or 'Déclinaison' of milk fed lamb from Aveyron, smoked sweet pepper, garnished with Greek salad. Desserts are equally delectable ideas like mallow biscuit with tulameen raspberry and tangy choco-iced tree or wafer biscuit of chocolate, 'Grand Cru Vénézuela' and rosemary and honey.
Les Orchidées is the hotel's other restaurant that is open from breakfast to lunch and is an ideal place for a business lunch or a quick snack while out shopping or sightseeing.
