Review on The Red Lion Freehouse

The Red Lion is the quintessential English pub complete with picturesque thatched roof, located in a quiet lane in the pretty rural village of East Chisenbury. Inside it continues to displays its charms with exposed brick walls, beams, roaring fire and tables set out on bare boards. It is run by husband and wife team Guy and Brittany Manning, both very accomplished chefs as their recent Michelin star award in the 2013 Guide confirms. They have cut their teeth in some highly regarded restaurants over the years, Guy worked for Chez Bruce for three years, as well as Michelin three-star Per Se in New York where he met his wife. Brittany is a highly skilled pastry chef who worked with Gordon Ramsay's Head Chef Neil Ferguson in New York with the opening of Allen & Delancey, as well as Martin Berasategui's eponymous three Michelin star restaurant with Guy.

The pair run a very industrious kitchen, they make their own bread, condiments such as ketchup, mayonnaise, chutney, dressing and horseradish, ice creams, chocolates and petits fours, cure, smoke, hang and roast most of their own meats and charcuterie, and grow a lot of their own salad and vegetables in the greenhouse. The rest of the ingredients are carefully sourced locally for the daily changing menu, ensuring that only the freshest and finest products are used in their dishes.

There's much to enjoy, choose a starter of chicken liver pate with Madeira jelly and toasted brioche or maybe smoked haddock ‘scotch egg’ with wilted spinach and grain mustard velouté. Precise cooking that is inventive and full of flavours shows up well in slow cooked pork belly with lentils, Moonraker beetroot, grilled leek and salsa verde or pan-fried halibut with fondant potatoes, button mushrooms, watercress and chive beurre blanc. Make sure you leave room for one of Britanny's wonderful desserts such as cocoa pound cake with peanut butter parfait, cocoa crumbs and milk chocolate custard or caramel poached apples with candied walnuts and sage ice cream. Accompanying the menu is a well conceived wine list together with local ale from Wiltshire microwbreweries and an extensive collection of fun after dinner drinks.

The Red Lion also has a boutique guest house offering five rooms, a short stroll from the pub, located by the River Avon.
