Review on Josephine's Filipino Restaurant
Josephine's has stayed the course in Charlotte Street while others have come and gone, and it remains the only place in the capital where you can sample authentic Filipino food.
The cuisine is a fascinating hybrid that has soaked up influences from China, Japan, the Mediterranean and the Americas: the result is something that is exotic, spicy but not too fiery and full of surprises.
Not everyone comes away convinced, but it's worth taking the plunge and trying the emblematic adobo chicken (a patriotic stew with peppers, soy, vinegar and coconut milk), as well as sinigang fish soup, sweet-and-sour escabeche of tilapia and lechon kawali (suckling pig). A bottle of San Mig-Nag beer goes well with the food, and the staff are charming.
