Review on The New Ship @ Dooleys Hotel
The New Ship Restaurant is set in the family-run Dooley's Hotel in the heart of the historic city of Waterford, located on The Quay overlooking the River Suir. The restaurant has a smart contemporary d้cor with chandelier lighting, well-laid tables and banquette seating set on modern wood flooring.
Heading the kitchen is Mark Murphy who has created a brasserie style menu using carefully sourced local produce for an Irish cuisine with European and Asian tones. Among the list of starters you might find Waterford black pudding and Cashel Blue salad, saut้ed potatoes with a honey and mustard dressed salad or rabbit terrine on homemade brown soda bread with tomato and apple relish. Main courses take in chicken roulade with a pork, sage and cranberry stuffing wrapped in streaky bacon with a red wine jus or pan fried fillet of cod on a bed of saut้ed bacon and cabbage with a caper and basil cream sauce. Desserts range from lime and lemongrass panna cotta with champagne sorbet, coated with coconut flakes to a traditional apple and berry crumble served with vanilla ice cream and cr่me anglais.
There is a well-priced international wine list together with a range of tasty cocktails.
