Review on Waterford Castle Hotel, Munster Room Restaurant
A private chain-link ferry is the only way to reach this glorious resort hotel, which stands on its own enchanting wooded island not far from Waterford city. The original edifice dates back to the sixteenth century and is surrounded by more than 300 acres of grounds including a deer park and a championship golf course.
There are fine views from the windows of the oak-panelled Munster Room restaurant, where guests can look forward to exciting seasonal menus peppered with top-notch Irish ingredients. Sally Barnes' smoked haddock croquettes come with buttered kale, lemon and chive cream, char-grilled free-range pork chops are served with turnip and prune gratin and wild garlic purée, and Irish cheeses such as St Tola and Knockalara also put in an appearance in various guises.
Elsewhere, you might see grilled cod fillet with chorizo and spinach risotto or seared duck breast with Puy lentils, parsnip mash and burnt orange sauce, while desserts might include pistachio profiteroles. The mood is formal and meals proceed at a leisurely pace, often to the accompaniment of music from the hotel's resident pianist.
