Relax in the magnificent oak-panelled lounge before moving on to J.R's, the conservatory-style restaurant, where you can watch the sun go down over the mountains. Begin your dinner with smoked chicken on herb salad with mango and basil dressing or seafood risotto finished with basil oil. Main courses follow the modern European path with the likes of poached suprême of salmon with leek and dill sauce, or char-grilled loin of Lakeland lamb on a bed of roasted vegetables with rosemary jus.
If you prefer fish, there might be roast loin of Fleetwood cod finished with Lancashire cheese, while desserts could range from sticky toffee pudding with rich butterscotch sauce to iced brandy and white chocolate parfait with a caramelised baby apple.
