Review on Bilash

A long-serving West Midlands rendezvous, the Bilash stands right in the centre of Wolverhampton opposite the Civic Centre. For more than 20 years, the kitchen has been delivering a highly distinctive menu, packed with a big selection of dishes that are a bit different to the curry house norm. Pickles are freshly made (always a good sign) and proceedings might kick off with some unexpected morsels like pancake rolls filled with shredded chicken or galouti kebabs (minced lamb with spices and mango powder).

There are the usual tandooris, biryanis and the like, but the kitchen scores with its specials: murghi tok is marinated chicken cooked with shatkora and other indigenous Bangladeshi fruit, while maach diya masala comprises grilled marinated sea bass with warm tomato ‘salsa’, mint and yoghurt. Vegetarians are well served and the concise modern wine list includes some intriguing bottles. A second branch, with the rather grand title of Bilash Champagne Lounge & Asian Grill, is now open on Bennetts Hill, Birmingham.

A spectacular dish which was the winner of Wolverhampton & central region’s curry chef of the year competition, and the runner up of the national finals. Steaks of the chicken breast are first marinated in garlic and ginger puree, salt,
pepper and sesame oil. The chicken is then cooked with fresh onions, ground coriander, curry leaves, fresh mint, chives, finely chopped tomatoes; plenty of freshly chopped coriander, homemade tomato paste and green chillies.
Chicken stock is also added to give this dish texture. This dish is served with stir fried noodles.
