Karma St Martin's is the first UK opening of the luxury expanding portfolio of five star hotels conceived by British entrepreneur and philanthropist, John Spence, which already has siblings in alluring exotic destinations such as Bali and Lombok, Indonesia and Jaipur, India. Ensconced at Lower Town in St Martin's, the third largest of the islands at the northeast corner of the Isles of Scilly in an area of outstanding natural beauty and tranquillity. Set in landscaped gardens with subtropical plants, individually designed guest rooms are situated within a small hamlet of Cornish-style cottages, offering stunning views of the powder white beach and crystal waters.

The restaurant is a charmingly appointed room, accented in neutral shades, tables are laid with crisp white linen and pretty vases of flowers, smart dark blue chairs reflect the entrancing azure sea views from the expansive bay windows, overlooking Tean Sound and Tresco. The kitchen shows its allegiance to indigenous ingredients sourced from trusted local suppliers, with fish arriving daily at the hotel's quay courtesy of fisherman, Ian Mitchell.

The kitchen crafts a modern menu using exotic flavours and classic cooking techniques inspired by European and Asian destinations. Typical offerings on the carte include starters in the shape of pan fried scallops with cauliflower and vanilla purée, apple jelly, duck crackling and tonka bean or from the land there's herbs chicken balloting with leek fondue, prune jam and chicken bouillon. Main courses pick up the theme with duck bolognaise with cauliflower cheese purée, sugar snaps and swede or a pan roasted supreme of cod. Indulgent desserts close the show, witness the pink praline tart served with milk ice-cream, olive oil jelly and blackberry "Cassatt" or Yuzu cheesecake paired with passion fruit sorbet and Greek yoghurt gel.
