Review on The Dysart Petersham
The Dysart is set in the small historic village of Petersham, overlooking the lovely green spaces of Richmond Park and a short walk to the River Thames. A family owned and run establishment, originally built as a pub in 1904 as part of the Arts and Crafts movement, it has undergone a sympathetic renovation of the interiors.
The dining room is an elegant affair with the original leaded windows facing south over the Park, and during winter months guests are welcomed by the large log burning stove. Their beautiful garden is a big attraction for al fresco dining when the sun shines, and sometimes there's a pianist at their antique Bechstin grand piano or a classical guitarist playing in the background, adding to the inviting ambience.
2010 Roux Scholar Kenneth Culhane holds sway in the kitchen, who not only spent a three-month stage at Jean-Georges in New York, as well at Tetsuya Wakuda in Sydney, but has graced the kitchens of two-Michelin-starred restaurant Patrick Guilbaud, as well Brett Graham's The Ledbury in Notting Hill. Local grown produce from small artisan suppliers and foragers, including their own garden is the focus for his menu, ensuring the finest and freshest ingredients for his dishes.
As a curtain raiser order veal sweetbread, Granny Smith apple, granola and truffle port sauce or charred mackerel, kombu braised daikon, ginger and champagne. Main courses also provide ample choice, from Huntsham Court Farm Longhorn beef, confit heritage carrots and miso mustard sauce to wild sea bass, lemon celeriac, spiced kaffir lime and green chilli sauce. To finish indulge in desserts such as tonka bean crème brûlée and peanut butter cookie or strawberry and brown butter financier, raw cream sorbet and green peppercorn jam.
The extensive wine list of over 200 bins has been carefully compiled to match the food with many produced from organic, sustainable and biodynamic vintners. The Dysart Petersham also takes bookings for their hugely popular classical recital on the first Sunday of each month, with wine served in the interval, followed by a candlelit supper.
The Dysart was the proud recipient of a Michelin star in the 2020 edition of the Guide.
