Review on Wine & Brine
In the beautiful traditional village of Moira, just eighteen miles from the city centre of Belfast, Wine & Brine opened its doors in December 2015. This exciting new venture is owned by renowned Great British menu chef Chris McGowan and his wife Davina.
Chris honed his culinary skills at Richard Corrigan's London restaurants for twelve years, prior to working for well regarded chefs such as Pierre Koffman and Gary Rhodes. The restaurant has certainly hit the ground running having scooped the Northern Ireland regional award, as well as the overall UK winner by the Waitrose Good Food Guide.
Located on Main Street in a Georgian-fronted building, the interior with it's open kitchen is flooded with natural light from the extensive skylight. Dark wood tables and chairs are well spaced with blue banquette seating around the edge of the room, and walls are adorned with interesting pictures of Irish writers.
Given the name, it is no surprise that the restaurant pickles, brines and ferments foods using Northern Ireland produce. Ingredients are meticulously procured from trusted local supplies for a menu along the lines of house cured salmon rolled in seaweed and cucumber relish or pressed ham knuckle, piccalilli purée and crispy crubeens. Equally inviting main courses follow in the shape of glazed short rib, beer onions, and burnt onion purée or from the sea pan roast fillet of hake, toasted almonds broccoli and buttermilk. To conclude there are tempting desserts such as chocolate mille feuille and hazelnut or rhubarb soufflé and vanilla.
To complement the dishes there's a carefully compiled wine list, tasty cocktails and local craft beer.
