Review on Cabotte
Two highly regarded master sommeliers, Xavier Rousset and Gearoid Daveney have combined their talents to open a new restaurant called Cabotte, located in the heart of the city on Gresham Street opposite the Guildhall. Xavier formerly of 28-50 and Texture has recently opened Blandford Comptoir in Marylebone to critical acclaim, whilst Daveney a current director of Burgundy specialist Flint Wines, CV includes Tom Aikens restaurant.
Taking its name from the small huts used by the workers in Burgundy vineyards to eat and store their tools, the interiors have been created by Rosendale Design to reflect the ambience of a traditional local bistro in the French countryside. Laid out over two floors with a private dining room upstairs, whitewashed brickwork is decorated with backlit mirrors, with a large copper relief dominating the end wall, set above rich burgundy banquette seating.
Taking the reins of the kitchen is Edward Boarland, who brings a wealth of experience in French cuisine to the table having plied his trade at renowned restaurants such as The Waterside Inn, Gordon Ramsey on Royal Hospital Road, Le Rafael in Paris and The Trianon Palace in Versailles. His menu showcases traditional French dishes with modern influences along the lines of Cornish mackerel escabèche, fennel salad and dill or Jambon persillé, ham and parsley terrine with apple and raisin chutney. Main courses pick up on beef cheeks, bourguignon en cocotte, savoy cabbage and smoked free range bacon or grilled fillet of Mullet, poached Maldon oyster and crémant velouté. As a finale, consider blackberry mille feuille with pecan praline or the apple tarte tatin paired with Cornish clotted cream for two to share.
Given the awards and accolades that the two master sommeliers have received it's no surprise that the wine list is a cracker, running to 600 bins with 500 from the Burgundy region. The wine list makes for enticing reading, with some serious contenders along the way, but there's plenty of options available by the glass using the innovative Coravin system.
