Just thirty minutes drive from Palma, Maria Salinas opened her eponymous restaurant in the peaceful village of Mancor de la Vall, at the foot of southern slopes of the Sierra de Tramuntana Mountain range. Set over two floors this gem of a restaurant occupies a listed building on one of the narrow streets in the heart of the village.
Maria has created an ambience of effortless style and warmth with homely touches throughout the restaurant. Cosy and intimate in a palette of mainly white, with an original beamed ceiling, white hand painted tables are prettily laid with contrasting blue runners and glassware. Interesting household curios such as an old sewing machine and grandfather clocks are set on shelves within the stone walls.
A talented chef whose cuisine emphasises superior ingredients treated simply and with impeccable technique, Maria earned her culinary stripes as Head Chef at prestigious hotels, Brondo Architectand and Hostal Cuba in Palma. Local produce sourced daily from the markets is woven throughout an innovative menu that appears on attractive vintage plates as highly accomplished and competent cooking.
Typically you might begin with a sweet potato soup with figs or Sobrassada, a raw, cured sausage supplied by her husband, who is regarded as the best producer of this Mallorcan speciality. Main courses carry on the regional theme with turbot, cauliflower, braised tomatoes and a balsamic-kimchee marinade or away from the sea, there's entrecote served with a selection of seasonal local vegetables, including beetroot and sweet potatoes. To finish it's hard to resist homemade cheesecake paired with red fruit and honey or the chocolate chestnut cake.
