Review on Quadrat Restaurant at Sant Franc Hotel Singular
Quadrat is the showpiece restaurant set within the five star Sant Franc Hotel Singular, named 'Top Hotel in Spain and Portugal' in the 2016 Condé Nast Traveler's Readers' Choice Awards. A 19th century restored manor house in the heart of the historic centre of Palma, opposite a small square dominated by the Gothic style church of Sant Francesc Basilica, the restaurant occupies a former stable block at the rear of the hotel. An elegant room with decorative references to it's former life, it also boasts a lush garden setting for al fresco dining.
Leading the kitchen is Spanish Chef Alfonso Lillo previously Head Chef of Terre Restaurant in Alicante, who has also worked in illustrious Michelin-starred kitchens such as Gordon Ramsay's Maze Restaurant and Heston Blumenthal's The Fat Duck. He prepares a Mediterranean menu with modern influences along the lines of curry mussels soup and toasted mousse followed by a main course of lamb shoulder cooked at low temperature served with vegetable cous cous and bitter cream or from the sea, Pil Pil Hake with pak choi and potato pearls. Desserts offer temptation with pistachio and vanilla filled profiteroles with chocolate sauce or cheesecake, peanut crumble and beet ice cream.
