Review on Sky By The Water
Following the departure of Andy Waters, the restaurant has now morphed into Sky By The Water. It's set within Resorts World Birmingham, Europe's only global leisure destination with the largest casino in the United Kingdom, shopping mall, restaurants and cinemas. A sleekly groomed venue featuring a chic bar area at the front, with the main dining room towards the rear.
The kitchen showcases a modern twist on classic British and French cooking from Head Chef Aaron Darnley, together with irresistible desserts from the finalist of Channel 4's Bake Off, Darryl Collins. A duo of salmon, poached and hot smoked, bound in crème fraiche, with pea, mint and shallot salad is a good starting point, before a main course of slow cooked ox cheek served with creamy mash, pickled celeriac and a red wine reduction. Then it's time to move on to desserts like salted caramel millionaire's shortbread with butterscotch crémeux and malted milk ice-cream or maybe passionfruit cheesecake with Jamaican ginger cake crumb and mango sorbet.
The wine list offers a good spread of well-chosen bottles from around the globe and there's also handcrafted, classically inspired cocktails.
