Review on Lympstone Manor Hotel & Restaurant
Originally a private home, esteemed Michelin-starred chef Michael Caines MBE launched Lympstone Manor in April 2017, after an extensive refurbishment programme has transformed the historic Grade II listed Georgian manor house into a luxurious contemporary country hotel. Located on the southern edge of Lympstone Village, it's set in 28 acres of garden, grounds and parkland with spectacular views of the Exe Estuary and the surrounding countryside.
There are three beautifully individually designed dining rooms, Powderham, Mamhead and Berry Head, all affording splendid vistas. Named after the nearby Castle, Powderham is an intimate room with six luxurious cream curved banquette style seats set against well-dressed tables, and walls featuring an abstract vision of Lympstone grounds and the estuary. Mamhead is an elegant room in a palette of terra ombra with dusty taupe velvet chairs and is suitable for private dining. Berry Head is the the largest dining room with floor to ceiling bay windows, chic chairs in contrasting colours of teal, and walls displaying artwork by Kurt Jackson.
Tom Hine has been appointed Head Chef, having previously worked alongside Michael Caine at a number of establishments over the years, including Gidleigh Park where Michael held two Michelin stars for 18 years. The kitchen sets out to pamper your palate with exquisite delicacies created with a focus on the seasonality of fresh, local produce. Lunch, à la carte and tasting menus are available in the main restaurant, with afternoon tea served in the lounges, bar and terraces.
Open proceedings with mille-feuille of tuna and scallops, citrus lime, Oscietra caviar, soused turnip and beetroot, wasabi cream, honey and soy vinaigrette or from the land pigeon salad, roasted duck liver, mangetout truffle salad, apple and hazelnut mayonnaise. Main courses embrace braised turbot, River Exe mussels and cockles with tomato and basil sauce or meat fans might be offered fillet of Darts Farm beef, braised cheek, horseradish and shallot confit, celeriac, mushroom purée and red wine sauce. Completing the picture are desserts such as banana parfait, chocolate, liquid salted caramel, and lime sorbet or hot pistachio soufflé paired with pistachio ice cream.
Michael has plans to create his own vineyard on Lympstone Manor, but meanwhile guests are spoilt for choice with a superb wine cellar containing over 600 bins.
