Review on Salvia Restaurant
Hotel Savlia, a lovingly restored 19th century mansion set over three floors can be found in a tranquil location in the centre of the town of Soller, just 40 minutes drive from the capital city of Palma in Mallorca. At the heart of the hotel is their critically acclaimed restaurant, seating just 30 guests including those staying in the hotel, reservations are at a premium. The restaurant is an elegantly appointed room with walls displaying traditional Mallorcan tiles, but the outside candlelit tables on their cobbled terrace are the most sought after, amid the lush garden with stunning views of the Tramuntana mountains.
At the helm of the kitchen is German chef Martin Winkler having previously worked at the renowned Es Passeig Restaurant in the Port of Soller. Beautifully displayed dishes are presented to diners showcasing a fusion of Mediterranean, International and Asian influences.
The menu cruises its way through starters such as Asian duck wonton served with a mango mayonnaise, leek and sprout salad, sweet ginger chips, crispy mango and a red shiso sorbet or cured salmon paired with a lime and herb cream, warm paprika potatoes, sorbet and caviar of cucumber, dill and pickled radish. Innovative main courses follow with braised Iberian pork cheeks, parsnip puree with a touch of honey, Savoy cabbage, sorassada and crispy parsnip chips or pescatarian's might opt for the pan fried scallops with braised fennel, homemade orange and parsley ravioli, peppercorns and a gel of Sóller oranges. To finish there are luscious offerings like Baileys pannacotta with crispy biscuit, coffee foam, Mascarpone ice-cream and crunchy cocoa or a parfait of white chocolate in a dark chocolate coat with amarena cherries, cherry caviar, pistachio and crumble.
Mallorcan wines are the focus of the wine list, as well as tasty cocktails all served in an idyllic and romantic setting.
