Review on Salt
Salt restaurant is set in the lovely medieval market town of Stratford upon Avon, just a few minutes walk from Shakespeare's birthplace on Henley Street and his funerary monument inside the Holy Trinity Church. It's the first solo project following a crowdfunding campaign from chef Paul Foster and his partner Rhiain. Located on Church Street in a Grade II-listed building, inside it has a cosy interior with a large exposed brick fireplace, old wooden beams and original stone flooring, all overlooked by a small semi-open kitchen.
Previously holding the position of Head Chef at Mallory Court in Leamington Spa, Paul has climbed the culinary ladder at esteemed restaurants such as Restaurant Sat Bains, The French Laundry in California and Belmond Le Manoir aux Quat'Saisons. He now delivers a concise repertoire of stylishly presented dishes using modern techniques and impeccably fresh seasonal ingredients. The results are appealing ideas like cured turbot, cucumber, grapes, almonds, and dill emulsion or maybe their own black pudding, cauliflower puree and beer pickled onions amongst the starters. When it comes to main courses meat fans might be offer lamb saddle, glazed scrag, goats curd, hispi cabbage and sprouting broccoli or from the sea there's Cornish cod, English asparagus, wild garlic, sea aster and St Austell mussels. Salted chocolate mousse, yoghurt sorbet and miso toffee or Yorkshire rhubarb, buttermilk ice, ginger crisp and sorrel is an enjoyable way to close proceedings.
The restaurant was awarded a prestigious Michelin star in the 2019 edition of the Restaurant Guide.
