Review on La Despensa del Barón
La Despensa del Barón is the signature restaurant in the luxury boutique hotel Posada Terra Santa, a former baronial mansion and listed Gothic building that was sympathetically restored and opened in the Old Town of Palma in 2014. The restaurant is situated on the ground floor with it's own entrance and is just a few minutes walk from the commercial centre and the Cathedral. A timelessly-styled retreat, with the original 15th-century aches forming a backdrop to a room decorated in neutral colours and contemporary furnishings.
David Raya took the helm of the kitchen in 2018, having previously climbed the culinary ladder in esteemed kitchens such as Michelin-starred Roca Moo in Barcelona. The finest ingredients are paramount for his dishes, with many ingredients sourced locally for a Mediterranean menu with Asian influences. Guests can expect starters in the shape of garlic prawn croquettes roast quail breast, quail egg, pea and asparagus shoots, all covered in a pea cream sauce. Up-to-the-minutes ideas are also evident when it comes to main courses witness, tataki, fillet of bluefin tuna coated in black and white sesame seeds with Wakame seaweed salad and lime and pepper balls or from the land 'Pluma' pork shoulder loin, grilled fresh Iberian acorn-fed pork served with a sweet fig, caramelised onion and cinnamon relish with a touch of rice vinegar. Desserts are also pretty showy offerings along the lines of panna cotta made with coconut milk and rum, caramelised pineapple and mint crumble or brownie with walnuts and vanilla ice cream.
