Castell Son Claret is a luxury hotel that can trace it's history back to 1450, approached from a stunning 1000-feet palm-lined avenue set amidst 326 acres of beautiful gardens and parkland, it nestles in the foothills of the Tramuntana Mountains in the picturesque village of Es Capdellà. Home to two restaurants under the helm of talented chef Fernando P. Arellano, guests have the choice of two-Michelin starred Zaranda or the more casual option of Olivera. The latter sports a smart contemporary dining room with views of the terrace, the swimming pool and the landscaped gardens.
Fernando has appointed Pep Forteza to lead the kitchen of Olivera and he proposes a Mediterranean menu with a focus on locally sourced produce. You might begin with avocado and mango “Ceviche” with prawns, basil and coriander before moving on to a main course of beef tenderloin with sweet potatoes purée, zucchini and “Cipollini” onions or from the sea sole with sautéed potatoes. As for desserts think, tangerine parfait paired with chocolate cream or passion fruit “Royal”, mint granite and coconut foam.
