Mana is the exciting new arrival in Manchester Life's Sawmill Court residential development, directly opposite Hallé St Peter's church in the Ancoats area of Manchester. The brains behind this hotly anticipated restaurant is Chester-born chef Simon Martin, who has sharpened his knives in Michelin-starred kitchens such as Noma in Copenhagen, as well as Restaurant Gordon Ramsey.

A stunning venue with enormous floor to ceiling curved windows draped with white voile curtains, allowing the area to be flooded with ambient light. It has a modern design featuring natural elements of wood, slate and stone, decked out in a neutral palette of cream and brown, with a herb wall fitted with solar plants to stimulate growth. Tables are well spaced around the £300,000 bespoke open kitchen, which is divided into four different work stations organised by cooking temperatures.

Throughout the year Simon will showcase four different finely balanced tasting menus to reflect the seasons, starting off with his Fall menu which will run from October to November. Native and foraged ingredients are carefully sourced from artisan producers, fisheries, farmers and markets across the country, and the results are endlessly appetising. The Fall menu consists of 13 courses and guests can look to innovative ideas like fried reindeer moss dipped in pine and chicken of the woods and pheasant garum. There's also red deer stag cooked over bichotan and a wild duck platter of truffles, umami herbs, fermented plum, cooked dulse, chanterelle and beef glaze, milk skin, cabbages and pickled shoots.

The Sommelier is on hand to guide you through the wine list and there's also the option of wine, juice or beer pairings. Mana was delighted to pick up a prestigious Michelin star in the 2020 edition of the Guide.
