Review on Da Terra
There's two new guns in town, chefs Rafael Cagali and Paulo Airaudo have launched Da Terra, a new restaurant set within the Town Hall Hotel in vibrant Bethnal Green. Previously it was home to Michelin-starred Nuno Mendes' Viajante, before becoming the Typing Room in 2014 with chef Lee Wescott. Rafael and Paulo, both have impressive CV's having worked at Heston Blumenthal's The Fat Duck, as well as other Michelin-starred restaurants such as Quique Dacosta in Spain. More recently Rafael held the position of Head Chef at Aulis, Simon Rogan's test kitchen and chef's table, while Paulo hit the headlines after winning a Michelin star at his Amelia restaurant in San Sebastian, just five months after opening.
Located on the ground floor of the hotel, the elegant interiors have been created by Blenheim Designs with a granite fronted open kitchen, so guests can watch all the theatre of the chefs at work. The décor shows a respect to the heritage of the room, retaining the original herringbone parquet flooring and vintage fireplace. Modern exposed concrete walls display an ever-changing display of Brazilian artwork which is available for purchase, and there's elegant brass screens and long pill shaped mirrors.
The kitchen will offer guests a choice of two tasting menus inspired by Latin America flavours with Italian influences, it will showcase the considerable talents of the two chef's experiences in some of the most critically acclaimed restaurants around the world. Menus reflect the very best of seasonal produce but you might see sardine, beetroot and crème fraîche or cod, cabbage and beurre blanc, as well as a meat dish like beef shin, artichoke, chard and mushrooms finishing with topinambur, white chocolate and balsamic vinegar.
To accompany your dining experience, the Sommelier is on hand to perfectly match the wine to the chosen dishes. Da Terra was delighted to pick up a prestigious Michelin star in the 2020 edition of the Guide.
