Review on Restaurant Folium
Tucked away in Birmingham's Jewellery Quarter, a short walk from St Paul's Square, Restaurant Folium is proving to be a thoroughbred addition to the area. The brainchild of Ben Tesh and his partner Lucy Hanlon, he mans the stoves having learned his craft at restaurants such as Turners in Harborne and the renowned Noma in Copenhagen. Housed in a former printworks, the restaurant has clean-cut lines by Faber Design with a Scandinavian vibe, bare wood tables are set on polished chevron wood flooring and there's a view to the kitchen through a glass partition window.
Ben showcases either a five course or seven course tasting menu using the highest quality and freshest of ingredients, sourced from sustainable and ethical suppliers. Dishes are simple in concept, sharply executed and bursting with natural flavour, witness mackerel, cucumber and English wasabi or turbot, dashi and hay butter, finishing with a delicious chocolate, salted milk and burnt cream.
The wine list has been carefully compiled to complement the flavours of the dishes, and the smiling service is warm and attentive.
