Review on Heritage at The Chequers
Chef Matt Gillan launched The Heritage at The Chequers in August 2017, following a successful kickstarter campaign to renovate the Edwardian property which had stood empty for two years. Located in the picturesque Sussex village of Slaugham it's just seven miles south of Crawley.
It's a light and airy filled space with a sleek and contemporary décor, the bar still serves the local community and visitors are welcome to pop in for a drink. The main focus is on the dining room in the conservatory with its tranquil views over the garden and the glorious surrounding countryside. The area has much to offer and The Chequers has five bedrooms should you wish to extend your visit.
Matt held a prestigious Michelin star for five years at The Pass in South Lodge Hotel, near Horsham and previously honed his skills at esteemed kitchens such as Midsummer House and Restaurant Gordon Ramsay, before setting up his own restaurants. Making the most of the local produce, Heritage offers lunch, seven-course tasting menus, with his signature winning dish The Herder which was served at the Great British Menu banquet appearing on the à la carte menu. Diners can look forward to the likes of roasted scallop, glazed chicken wing, black sesame, smoked sweetcorn and cocoa nib before moving on to the main event of saddle and belly of lamb, artichoke puree, roasted artichoke,
pressed pepper, truffle peas, tomato and basil sauce. Proceedings conclude in style with desserts like chocolate crémeux, peanut ice cream, coffee syrup and chocolate tuille or maybe raspberry tart, pickled raspberry, nougatine and lemon curd.
General Manager Hannah Bamford has curated a creditable selection of wines which can be paired with your chosen dishes. Alongside the wine list there's signature cocktails that have been created from ingredients in their garden, as well as foraged from the countryside.
