Review on Hide and Fox
Hide and Fox opened its doors in June 2019 in the tranquil village of Saltwood, just a short drive from the south coastal towns of Folkestone and Hythe. The duo behind the restaurant, Allister Barsby and Alice Bussi certainly have A-list credentials and the denizens in the area are delighted to have such a high calibre restaurant on their doorstep.
Allister brings a sound pedigree from Michelin-starred kitchens such as Gidleigh Park Hotel in Devon, The Bath Priory and more recently held the position of Head Chef at The Grove at Narbeth, where he was awarded three prestigious AA Rosettes. Italian born Alice also has a Michelin-starred background having worked at The Bath Priory for four years as a Sommelier and then Restaurant Manager. In 2018 she received the illustrious title of Food and Beverage Manager of the Year at the Hotel Catey Awards.
The restaurant has a modern décor in an understated elegant style, decked out in a palette of cream and blue. Walls are decorated with a few seascapes and a lovely wooden dresser displays bottles of wine. The room has 12 well-spaced tables and the ambience is intimate and relaxed with friendly and knowledgeable service.
The menu focuses on the abundance of seasonal supplies available from the Kent larder and dishes are displayed with artistic flair. Open proceedings with the likes of dressed crab, crème fraîche, curry and mango or from the land squab pigeon served with beetroot, black pudding, date and hazelnut. Moving on there's turbot, leek fondue, girolle mushroom, shallots and bacon foam or lamb loin and belly with braised gem, baby carrot, curd and anchovy. Make sure you leave room for desserts like strawberry, Tonka bean mousse, sablé, mint and strawberry sorbet or Snickers, peanut parfait, brownie, Caramelia namelaka and ice cream.
The first-class wine list curated by Alice and Head Sommelier Marian is an interesting slate with options available by the glass, together with cocktails like White Cliff, London dry gin, almond syrup, grapefruit and mint.
