Review on Wilder Restaurant and Bar

Wilder Restaurant and Bar is the exciting new arrival at the luxury Sir Terence Conran's Boundary Hotel, a converted Victorian printing warehouse in the heart of Shoreditch. Replacing Stéphane Reynaud's Tratra restaurant which closed in 2018, the venue has been used as an events space until now.

The 60-cover subterranean venue incorporates a 60-cover restaurant, bar and private dining room designed by Kirkwood and McCarthy. A high-ceilinged room featuring exposed brick and walls rendered with an old-fashioned clay technique. Decorated in earthy tones and textures with Ash wood tables from London based Jan Hendzel Studio. Custom-made banquette seating is also made in Ash wood and the chairs are from Carl Hansen & Son. Overhead there's beautiful installations of foliage from Barton Estate, created by Worm, an East London floral design studio.

Wilder Restaurant is a partnership between Sir Terence Conran and Richard McLellan, the former head chef of the Typing Room restaurant in Bethnal Green. The kitchen sources the finest of British produce from trusted suppliers focusing on sustainability and seasonality, with some ingredients supplied from Conran's 145-acre Barton Court estate in Kintbury, West Berkshire.

Among the starters look for scallops, turnip, green plums and kelp before moving on to the main event of partridge, hispi, russet and buckwheat or from the sea, hake, cockles, black cabbage and gutweed. Desserts in the shape of apple, soured cream, lemon thyme and oats or meadowsweet, white chocolate and blueberries make a fitting finale.

The first-class wine list highlighting sustainable and biodynamic producers is curated by consultant Lucy Ward, previously of Dinner by Heston and Noble Rot. There's also a bespoke Wilder gin co-created with the nearby East London Liquor Company and cocktails like the Foraged Sour, Fig Americano and Champagne Rhubarb Gimlet.
