Review on Silo

After a successful five years in Brighton, Douglas McMaster moved Silo his acclaimed zero-waste restaurant to Hackney Wick in East London. He has teamed up with CRATE Brewery and the restaurant occupies the first floor of a beautiful East London warehouse, set by the River Lea.

The interiors have been created by renowned sustainable designer Nina Woodcroft and material conservationist Seetal Solanki, featuring a lofty double-height ceiling, whitewashed walls and industrial warehouse-style windows, with the furniture crafted from post-industrial materials. The dark wood panelled open kitchen has a burning fire at its centre and a large hand-crafted counter is made out of recycled glass bottles.

Douglas McMaster has picked up the title of Sustainability Champion in The Good Food Guide 2020 as recognition of his tremendous work in this field. Silo sources all of its food in reusable containers from local producers to reduce its carbon footprint, with many of its core ingredients churned, cured or fermented on site. Anything that isn't consumed by the customers is fed into their aerobic digester, which can generate up to 60kg of compost in just 24 hours, and this service is also available to their neighbours.

Guest can either choose from the frequently changing menu of about 10 dishes or opt for the 6 course tasting menu. Look for dishes along the lines of cuttlefish, Tokyo turnips and white kimchi; charred white artichokes, stichelton blue sauce and ruby kraut; golden beetroots glazed in beetroot molasses, Mexican marigold and shoyu, finishing on a sweet note with goat's milk ice cream, sourdough miso caramel and pine snow.

The wine list has been carefully curated by wine manager Ania Smelskaya, previously of Sager + Wilde, Silo Brighton and Plateau Brighton, and is sourced from small, artisanal producers. Cocktails come courtesy of the renowned Ryan Chetiyawardana, aka Mr Lyan and there's also a fruity Fig Leaf Kombucha brewed exclusively for Silo by Jarr Kombucha, and craft beer from Silo's partner Crate Brewery.
