Review on Tandem
Occupying the former premises of Mem-Saab Indian restaurant, it's set in a Grade II-listed building that has been incorporated into the Highcross shopping centre in the heart of the city. It has an entrance on St Peter's Square into the main bar area and another one on Highcross Street for the first floor fine dining room. Tandem started life as acclaimed chef Cyrus Todiwala's first restaurant outside London together with Raphael Hospitality, but he is now no longer associated with the restaurant.
Tandem will offer guests five different dining experiences, including an intimate chef's table and a stunning rooftop terrace. The ground floor has a sleek bar area serving signature cocktails and a wide selection of draught beers, as well as an informal dining experience with a menu of Goan influenced Portuguese small plates designed for sharing. When dining on the first floor, you can enjoy a pre or post dinner aperitif in the Library Bar that has retained original features such as the fireplace and sash window, before heading into the main dining room that's been decorated in a contemporary style with modern artwork adorning the walls.
The menu reflects the rich tapestry of Indian cuisine using traditional cooking techniques, whilst making excellent use of British produce. A good starting point would be their signature tandoori honey salmon, made with with fresh Scottish salmon fillet, home smoked, marinated in honey mustard, a blend of secret spices and served with dill cucumber raita. When it comes to main courses, there's lamb chettinad, braised lamb pieces in a fresh crushed coconut and black peppercorn gravy, with spices and curry leaves, or from the sea Goan prawn curry, a classic Goan coconut-based curry, made using sustainably sourced red sea prawns and tomatoes. To finish on a sweet note why not opt for the rich chocolate sorbet or the pistachio kulfi.
